Kan Nihon Kai Mizusumi no Sato Junmai Daiginjyo Sake
島根 環日本海 「水澄みの里」

Kan Nihon Kai Mizusumi No Sato Junmai Daiginjyo Sake | Sake Inn

Prefecture: Shimane | Alcohol: 16-17% | SMV +3

This Kan Nihon Kai Mizusumi no Sato Junmai Daiginjyo Sake , is also known as the "Sea of Japan Rim". It is brought to you by the well-known Nihonkai Shuzo brewery and is made from Yamada-Nishiki rice, one of the more well-known high-quality sake rice, polished down to 40%.

This premium, well-balanced sake has a rich and fruity aroma thanks to the highly-polished Yamada-Nishiki Rice. It produces brilliant notes of cherry blossoms and honey on the nose, while the taste of ripe honeydew melon and cantaloupe are apparent on the palate, with hints of pear and green apple. Available in 720ml here.

Serving temperature: Chilled preferably, or at room temperature
Pairing suggestions: light dishes like sashimi and oil-based pasta

Okunomatsu George Black Junmai Daiginjyo Sake

Prefecture: Fukushima | Alcohol: 16% | SMV -1

One of the Samurai labels for Okunomatsu brewery, George Black Junmai Daiginjyo Sake is an exquisite sake produced by the nineteenth head of the samurai, Takeji Yusa, who is the descendant of the samurais.  "George" is brewed with the aim of "the best sake brewing by fusing traditional techniques and the latest technology". This sake tastes extremely delicate and provides an overpowering after taste. Has a pure melon aroma enhanced by subtle nuttiness with silky layered texture tasting notes. Available in 720ml here.

Hakkaisan Junmai Daiginjyo Sake
八海山「純米大吟醸」

Hakkaisan Junmai Daiginjyo Sake | Sake Inn

Prefecture: Niigata | Alcohol: 15.5% | SMV +4

Hand-made Koji and spring water from melted snow – also known as the “pure water of the god Raiden”, is used to brew this elegant Hakkaisan Junmai Daiginjyo. By using Yamada-Nishiki, Gohyakumangoku, and Miyama-Nishiki sake rice, all polished down to 45% remaining, this junmai daiginjyo sake reflects Hakkaisan’s classic crisp and clean style, and leaves your palate engaged and refreshed. This refined sake pairs well with almost all kinds of food. Its pronounced clarity, clean taste, and elegant, gentle sweetness, will enhance the flavour of any cuisine. Available in 300ml and 1.8L here.
