    Established in 1860, Hiroshima, Suishin Yamane Honten Brewery was recognized as a sake manufacturer pre-war for discovering the "Kyokai yeast No. 3" in 1914. The brewery also emphasizes the use of ultra-soft water drawn from the foot of Mt. Takanosu through their brewing process called shikomi. As ultra-soft water has almost no mineral content, sake brewed with this water gives off a delicate, refreshing taste, in addition to full, elegant sweetness and richness.
