Iwai Rice

      First cultivated in 1933 in the Tango Branch of the Kyoto Prefectural Agricultural Experiment Station, it is one of the two rice types grown in Kyoto. Iwai is known for its high suitability for sake production. Its large-grained and soft opaque "white heart" was a crowd favourite but it has a couple of issues that limit its production and availability.
