A new world saké with strong fruit flavours on a crisp, clean saké using old-world production methods. Based in Kobe, Kiku-masamune brewery has been consistently producing outstanding saké for over 350 years (it was established in 1659). With an emphasis on high quality and the use of traditional methods, it has since become one of Japan’s leading saké brands.

Japanese Name: 越乃寒梅 金無垢 純米大吟醸酒
Kin-muku Junmai Daiginjyo is made from Yamada Nishiki rice with a polishing ratio of 35% and is known for its faint ginjyo fragrance and profound, delicate flavour.
This sake is the best way to experience the unique qualities of sake made with Yamadanishiki, which grows more flavorful over long brewing. To fully enjoy Kinmuku’s fragrance and taste we recommend that it be served warm. Recommended pairing with salmon belly sashimi, grilled sanma fish, fried squid with dark shoyu and oden.

The Kamoshibito Kuheiji Junmai Daiginjyo Sake is the flagship product of the Kamoshibito Kuheiji brewery. A beautiful and elegant sake with complexity and energy, it has a melon, pear, apple on the nose, with a hint of lychee, wood leaf, and Japanese cypress. The sake is a pleasant balance between white chocolate sweetness and mandarin orange peel bitterness.
Such a marked highlighting of rice cannot be achieved without being accompanied by all the other flavours. Because this rice is less polished and involved in fermentations at higher temperatures than average, it brings with its sweetness, umami, acidity, astringency and bitterness. A beautiful expression of what we call Go Mi, the five flavours in Japanese.
Serves well with all types of cuisines. Recommended pairing with premium seafood like uni, awabi (abalone) and pan-seared foie gras.
