The Kamoshibito Kuheiji Junmai Daiginjyo Sake is the flagship product of the Kamoshibito Kuheiji brewery. A beautiful and elegant sake with complexity and energy, it has a melon, pear, apple on the nose, with a hint of lychee, wood leaf, and Japanese cypress. The sake is a pleasant balance between white chocolate sweetness and mandarin orange peel bitterness.
Such a marked highlighting of rice cannot be achieved without being accompanied by all the other flavours. Because this rice is less polished and involved in fermentations at higher temperatures than average, it brings with its sweetness, umami, acidity, astringency and bitterness. A beautiful expression of what we call Go Mi, the five flavours in Japanese.
Serves well with all types of cuisines. Recommended pairing with premium seafood like uni, awabi (abalone) and pan-seared foie gras.

The Kiku Masamune Kimoto Daiginjyo Sake is brewed using the traditional and labour intensive Kimoto method, which results in the signature clean, crisp taste. This sake is one brew to please every discerning palate, with its distinctive, rich flavour slightly tart with a slight semblance of pears. It can be best savoured either at room temperature or chilled. Recommended pairing with satsuma age (fish cake), garlic flavour chicken wings, sushi or steamed fish.
