A beautiful and elegant sake with complexity and energy, it has a melon, pear, apple on the nose, with a hint of lychee, wood leaf, and Japanese cypress. The sake is a pleasant balance between white chocolate sweetness and mandarin orange peel bitterness.
Such a marked highlighting of rice cannot be achieved without being accompanied by all the other flavours. Because this rice is less polished and involved in fermentations at higher temperatures than average, it brings with its sweetness, umami, acidity, astringency and bitterness. A beautiful expression of what we call Go Mi, the five flavours in Japanese.
Serves well with all types of cuisines. Recommended pairing with premium seafood like uni, awabi (abalone) and pan-seared foie gras.
