Chitosetsuru Ginjyo Koori Wo Ukabete sake uses sub-soil water of Toyohira River. Subsoil water is the underground water that flows under the riverbed. The water is filtered naturally underground, so it is said that the water quality is higher than surface water. Hence this sake produces a smooth balance when savoured, with a slightly sharp acidity yet fruity lingering sensation.

Hokkaido has a cool climate with little humidity, so fermentation is restrained and it is easy to produce sake with a refreshing, dry flavour. Chitosetsuru is made from water created by the vast natural world of Hokkaido, which lends the finished product a uniquely deep flavour. A classic Hokkaido style sake with a refreshing fruity aroma and deep layers when savour.
