The Kotsuzumi Rojoh Hana Ari Kuro Botan Junmai Daiginjyo Sake is brewed from sake rice ‘Tajima Kyoryoku’, which is difficult to grow and yields in low quantity. This sake produces strong ‘umami’ from the sake rice and koji, making it a well-rounded and powerful sake. It complements well with meat, hot pot and Italian cuisines, and pairs especially well with lightly-grilled meat dishes. Recommended pairing dishes includes squik ink spaghetti, hamburger steak in demiglace sauce and chicken yakitori.

In order to make the best use of the ingredients, the boiling point is kept low and the distillation is carried out under reduced pressure to about 40°C so as not to damage the mash, which is fermented at a low temperature (about 25°C).
